Nobody would call me a fabulous cook. But recently, I’ve been making some effort. It’s never too late, I suppose. So I’m trying new things, one of which is hot sauce. I had never touched the stuff in my life. Back on Long Island, it wasn’t a big thing. But it seemingly is here in Indiana, where I live now. It’s as ubiquitous as ketchup in restaurants. Even at breakfast, the server asks not if you want hot sauce, but which one. They often have three.

So in hopes of adding a little umph to my admittedly basic kitchen creations and embracing one more Midwest lifestyle adaptation, I got a bottle of Cholula in Kroger. I used it timidly in foods I thought I should, like chili.

Then I came across Disco Sauce, a sweet relative of traditional hot sauce.

Truth be told, it caught my eye because it was featured as a secret ingredient in Bloody Marys (my favorite cocktail and one, in my opinion, that gets far too little respect.) The first two ingredients are orange juice and pineapple, so right there it sounded interesting.

When I sussed out more info, I found it was specifically made to work well with a wide array of dishes and even in homemade cocktails. I can vouch that it’s amazing in a Bloody Mary. It also appears to be super popular mixed with the salt on the rim of a margarita, but I haven’t tried that.

It balances sweet and tangy with a kick of heat from habanero and jalapeno peppers. That heat is on the mild side, but that’s fine for me. The Disco Sauce folks call it medium heat, but still, I can’t imagine it would be beloved by the hardcore hot sauce enthusiasts whose goal is to sweat into their plates. It’s delicious, with a smooth, pineappley-peppery kick, and gluten-free and vegan with no preservatives. It’s also low on salt, for a hot sauce.

I’ve been playing around with it in the kitchen for a little over a week, and it works beautifully in a steak marinade. The burst of citrus, I’m finding, makes it a yummy dipping sauce for chicken wings or tenders. I’ve added it to simple stir-fries, and – this is saying a lot for me – to scrambled eggs. Oh, and even tuna salad. The consistency is thin, but the way it dispenses makes it easy to get a tiny amount out, just enough to add a smidge of zip to a small portion of food, like a tuna, chicken, or egg salad sandwich, without overpowering it.

That’s what is great about it. What’s less than great is the price, steep for a 5-ounce bottle. But that said, it lasts a while, as a smidge of zip goes a long way flavor-wise. Someone who is into serious heat and so goes through a bottle of hot sauce a week is probably not going to be buying it anyway. Good to know: if you try it and like it, buying three bottles at a time gets you a huge discount. Also good to know: the company is a founding member of The Feeding People Foundation and has provided more than 27,000 meals to people in need.

All in all, Disco sauce just works as a hot sauce for those who don’t really think they’re hot-sauce people. Plus, being a premium sauce and having a cute bottle makes it a wonderful little gift for anyone who likes to kick around the kitchen making dishes with a little kick.
